I love my Instant Pot. The poor thing gets used at least weekly. It’s fast and convenient, so that means it’s a winner in my house. The fact that I can take chicken from the freezer and put it directly into the Instant Pot is probably one reason that some sort of shredded chicken dish is on my menu once a week.

However, I get it. Shredded chicken can be boring if you are just eating chicken. But…wait for it. Using some simple recipes, you can transform that bland, shredded chicken into a delicious meal that your whole family will enjoy. The bonus is that you can cook the chicken well in advance, and cook it fast.

Here are 4 ways to use shredded chicken. These recipes are tried and true. They are cost effective, fast, and kid approved. Plus, they are all made with real food.

Cooking the Shredded Chicken

So, I must start with the obvious. If I’m going to give you my favorite recipes that use shredded chicken, I better make sure you know how to make the chicken. This is the method that I use. I’m sure there are hundreds of great methods out there. I am not a chef or a recipe developer, so this is the down and dirty.

  • Place chicken breasts or thighs {you can use frozen or thawed} in the Instant Pot
  • Add chicken stock – use enough to cover the bottom layer of chicken
  • Season with salt, pepper, garlic, onion, and paprika
  • Close the lid, make sure it’s sealed, and press the poultry button
  • Once the chicken is finished, let the steam release naturally if you have time. Then, drain most of the stock. Get out your hand mixer, and shred that chicken. **The hand mixer works wonders and makes shredding the chicken so easy.**

You can definitely use a Crock Pot if you don’t have an Instant Pot. It will just need to cook longer. Also, if you have a fancy Kitchen Aid mixer, that works well for shredding the chicken too. I just haven’t upgraded that far, so I’m using the Hamilton Beach mixer, which works just fine.

Buffalo Chicken Casserole

I don’t know how many times I have linked to this recipe, but I know this isn’t the first time. The reason it’s my go to is because I absolutely love it. To take it up a notch, I’ll add some dump ranch and some diced avocado to my bowl. You don’t need a side with this dish, but if you’re like me and just like something extra, raw veggies and dump ranch serve as a perfect side.

Chicken, Broccoli, and “Rice” Casserole

So, this is one of my regulars. It’s really, really easy. Plus, it freezes well. My kids love broccoli, so I don’t get push back on this dish very often. They also don’t even notice the cauliflower rice, so that’s another win. For the cauliflower rice, I buy the frozen kind and just throw it in the microwave. We do incorporate some dairy in our home, so I use shredded cheese in place of the nutritional yeast. I also top this casserole with a little more shredded cheese. The cheese definitely isn’t necessary, but it does enhance the dish.

Chicken Pot Pie Soup

Anyone else love chicken pot pie? I do. Like, I really do. However, my stomach can’t quite handle the pastry shell anymore. I must say, this soup tastes just like chicken pot pie filling. It’s creamy and delicious. I actually just made this soup for the first time a few weeks ago, and it was a huge it. The best part is that the rich, creamy texture comes from cauliflower. Yep, cauliflower. This soup is loaded down with veggies, and no one will even know it. I serve this with a large salad, and the kids usually get a grilled cheese on homemade sourdough.

Chicken Taco Bowls

Mexican food is my absolute weakness. I love it so much. Honestly, if I could only eat one kind of food for the rest of my life, it would be some version of Mexican food. So, naturally, I had to include some chicken tacos. For the chicken, if you are strictly cooking your shredded chicken for tacos, I would cook the chicken in a marinade and salsa instead of chicken stock. I use The New Primal Hot and Spicy marinade as well as a jar of salsa when I cook my shredded chicken for tacos. I also add a pack of taco seasoning. The Reiga Organic seasoning is really good, and it’s clean.

We usually do a taco bowl that contains cauliflower rice, cabbage or lettuce, tomatoes, red onion, guacamole, sour cream, and cheese. You can get really creative here. Add whatever toppings you like. If a bowl isn’t your thing, we really like the Siete Foods tortillas and chips. Here’s a basic recipe, but you really can make this your own very easily.

Seriously, these are some of the easiest meals ever. Shredded chicken is so fast, and you can use chicken breasts or chicken thighs. Make a big batch on the weekend, and use it for two different recipes this week. Really, cooking doesn’t get much easier than that.
